In 1910, the original Camarena distillery was burned during the Mexican Revolution. Everything was lost, except one stone tahona. For the family, it was more than equipment. It was proof that their craft would endure.
That stone became legacy.
Years later, Felipe Camarena rebuilt El Pandillo with a clear vision: use engineering to protect tradition, not industrialize it.
Here, innovation doesn’t replace heritage.
It sharpens it.

Selective Harvesting
Only mature agaves are chosen. Respecting both sugar concentration and plant character.
Even Steam Precision
Modified stone ovens inject steam from top and bottom for uniform cooking and maximum sugar development.
Felipestein & Igor
Agave is first broken down by Igor, then slowly pressed by Felipestein. A custom mechanical tahona designed to extract without damaging the fiber.
Open-Air & Family Yeast
Fermentation takes place in open-air tanks using the Camarena family yeast — allowing fiber contact for deeper agave expression.
Precision Distilled
Tall stills shape a spirit that is clean, mineral, and defined.
