Tequila fortaleza
Near the base of the volcano, an old distillery was brought back to life — not to compete with the industry, but to honor what came before it.

Guillermo Erickson Sauza is fifth generation of one of Jalisco’s historic tequila families. But instead of inheriting an empire, he watched it disappear into corporate hands.
Years later, he returned — not to build something bigger, but to rebuild something honest.
Inside the revived distillery, time moves differently. Tahona extraction. Wooden fermentation tanks. Copper stills. No shortcuts. No rush.
Fortaleza does not try to keep up.
It stands apart.
Inside Fortaleza — where patience, volcanic stone, and copper stills revive a process nearly lost to industrial scale.
Brick Oven Slow Roast
Extended cooking develops natural sugars and deep baked aromas.
Two-Ton Tahona
Slow crushing enhances texture and extracts richer agave character.
Open Wooden Tanks
Natural fermentation builds depth without artificial intervention.
Copper Pot Stills
Traditional copper stills preserve weight, texture, and a more concentrated agave expression.
