The Labastida family didn’t just restore a 300-year-old estate they revived a way of life. Within its walls lives Taberna Tres Gallos, where raicilla has been quietly distilled long before global markets ever cared.
Wild Maximiliana
Grown from seed to preserve native genetics, harvested by hand after 8 years and transported by rescued donkeys across the Sierra terrain.
Three Days Over Firewood
Small-batch brick oven cooking for 72 hours, allowing subtle smoke and mountain character to infuse the agave naturally.
Mountain Water Extraction
Roller-milled and blended with crystal-clear spring water from the adjacent mountain stream.
Open-Air, Native Influence
Fermented in wood and steel without commercial yeast, absorbing the natural notes of zapote and guava trees surrounding the hacienda.
Slow Spirit 7 to 9 Hours
Fire-heated stainless steel stills run slowly to preserve essential oils, giving El Acabo its silky, fruit-forward body.
It was incredible to walk through a landscape covered in agave fields of different species, revealing a stunning range of colors, shapes, and sizes. The hacienda itself is a beautiful place.
Visiting Taberna 3 Gallos and exploring the story of raicilla made my trip unforgettable. But sipping El Acabo and Asil right where they’re made… that completely changed the experience.
Tres Gallos and Ahuacatapec was everything I needed to see, and showed me just how much I didn’t know about Raicilla! From the beautiful Hacienda that showcased hundreds of years of family heritage, to the families that came to together to share their stories and history. We got to see and learn about every step in Tres Gallos Distillery. From harvesting wild Maximilliana, to cooking, shredding, and fermenting the musto beside the cheese factory. This estate was world class, and my only regret was not being able to spend more time in it. I’ll be back soon!
